Hoddles Creek Estate Pinot Noir is a single vineyard wine sourced from the steeply sloping estate vineyard at Hoddles Creek in the Upper Yarra Valley.
The handpicked grapes are destemmed without crushing. A portion is left to cold soak for 4-5 days, while the rest is fermented immediately. Fermentation takes place with both natural and cultured yeasts.
Some ferments undergo post ferment maceration. The wine is then gently pressed and transferred to new and seasoned French oak to mature for 11 months. It is bottled without filtration or fining.
Deep red, Hoddles Creek Estate Pinot Noir has dark berry flavours, firm tannins and a long finish. Cellaring potential is seven years.
